Quick and Easy Beer Bread (Milk, Egg, Nut-free) January 9, 2011

These arctic winter days make me crave fresh, warm bread.  Not that I don’t gravitate towards it at all other times during the year, too.  I guess cold weather is just a good excuse to get baking!

My girlfriend, who’s an ace in the kitchen, passed along this recipe which is naturally allergy-free and delicious.  Enjoy!

Ingredients:

3 cups flour

3 tsp. baking powder

1 tsp salt

1/4 cup sugar

1 can beer (12 0z)

cooking spray

Preheat oven to 375 degrees F.  Sift flour into a large bowl or stand mixer if you have one (using hook accessory).  Add remaining ingredients.  [Note:  You may wish to add additional flour if batter seems too wet.]  Place dough in traditional loaf pan coated with cooking spray.  Brush with olive oil and place in oven.  Bake 1 hour, remove from pan and cool for about 15 minutes before serving.
